THANK GOD FOR MADGE'S LAMINGTONS!
FINALLY! Someone in the Philippines got lamingtons right!!!! These are amazing... incredible... bring me back to a childhood place that is yummy, safe, sweet, warm and fuzzy. I will probably end up eating a gazillion of Madge's lamingtons in my lifetime :)
Yummy Lamingtons
I bought this in Salcedo Market on Saturday and put it in the refrigerator. I ate it on Monday afternoon. This cake is light with a thin chocolate icing, not gooey, and the coconut is delicious. You will want to eat more than one, but I put the rest in the freezer (airtight container as instructed) so it stays fresh longer.
